Raw Veggie Crackers
½ Cup whole flax soaked in about 3/4 C of water (soak for 1 or more hours)
¼ Cup sunflower seeds
¼ Cup Pumpkin seeds
¼ Cup Sesame seeds
½ Cup ground flax
½ Cup Chopped bell pepper
½ Cup carrot pulp (leftovers from juicing) or very finely chopped
½ Cup chopped tomato
1 Tbsp chopped green onion or about 1 green onion
2-3 Tbsp lemon juice
1 – 1.5 tsp Italian seasoning (or add any other herbs or spices you want)
Add veggies into food processor and process. scrape the edges of the food processor. You want the veggies to be broken down into small pieces. Add the spices, lemon juice and herbs. Process until well mixed. Add seeds and pulse to mix.
Pour this mixture into a large mixing bowl. Add the soaked whole flax and the ground flax. Stir to mix well.
Spread mixture onto dehydrator trays. About 2.5 C per large tray (14×14). Do not spread too thick because then crackers will be a little chewy.
Dehydrate at 105 for about 7-8 hours. Check and see if they peel off teflex sheets without sticking too much. If they do then flip and put on mesh trays and dehydrate another 2 hours or more until they are dry and crispy. The length of dehydrating time varies a lot.
